Flour Tortilla recipe

Ingredients:

2 cups All-Purpose Flour, King Arthur
1 ½ tsp. Baking POWDER, Aluminum Free (make sure it is new and fresh)
1 tsp. salt
3 tsp. EVOO
¾ cup Silk Soy Milk, warm to 100 F

1. Combine dry ingredients and mix with spoon in mixing bowl
2. Slowly add warm milk/silk soy until balls form.
3. Mix and dribble in more silk soy 1 tsp at a time until dough forms single ball.
4. Knead by hand for 2 minutes.
5. Let dough rest 20 minutes.
6. Divide dough into 8 pieces.
7. Roll each of the 8 pieces into a ball.
8. Let the dough rest 20 minutes or it won't roll out.
9. Roll out each ball into an 8" tortilla (or use a press).
10. Heat a dry skillet on medium heat.
11. Cook each tortilla for about 30 seconds on each side in the skillet. You can overcook and make a crispy chip if desired.

Keep cooked tortillas covered in a napkin.
